Anatoli Laurel (Bay Leaves)

Bay leaves, which come from the laurel tree, are one of the oldest herbs used in Greek cooking and known to Greeks since antiquity.

Laurel is added to soups, beans, pulses, and stews. Fresh leaves have very little flavour as this herb’s aroma develops during the drying process which lasts from four to six weeks.

Laurel is both slightly bitter and subtly sweet, with tones of thyme blossoms and oregano. For a more intense flavour, crush leaves before adding to the pot.

Although laurel is used mostly in savoury dishes, it is also used in some areas to subtly flavour custards or rice pudding. Always remember to remove the bay before serving.

Η δάφνη, ένα από τα πιο αρωματικά φυτά της ελληνικής κουζίνας, είναι τα φύλλα ενός μικρού δέντρου γνωστό από την αρχαιότητα.

Φύλλα δάφνης προσθέτουμε σε σούπες, όσπρια ή μαγειρευτά. Τα φρέσκα φύλλα έχουν ελάχιστη γεύση ή άρωμα, καθώς αυτό αναπτύσσεται στη διαδικασία της αποξήρανσης που διαρκεί 4-6 εβδομάδες.

Η γεύση του βότανου συνδυάζει πικρό και γλυκό, με νότες από άνθη θυμαριού και ρίγανης. Για ακόμα πιο έντονη γεύση, μπορείτε να θρυμματίσετε τα φύλλα.

Παρότι η δάφνη χρησιμοποιείται κυρίως σε φαγητά, έχει θέση και στη ζαχαροπλαστική, καθώς χρησιμοποιείται για να αρωματίσει κρέμες ή ρυζόγαλο. Θυμηθείτε να αφαιρέσετε τα φύλλα δάφνης πριν το σερβίρισμα.
