Anatoli Ground Cloves

Cloves have a strong flavour and aroma that combines spicy and sweet notes–one reason why it features in both sweet and savoury recipes. It’s more common in autumn and winter recipes because of this sense of “warmth” it imparts.

It’s no coincidence that the clove resembles a rose in miniature as this spice is actually the flower bud of a tree from the myrtle family (that includes the eucalyptus) and which grows mainly in Indonesia, Madagascar and Zanzibar. The bud is cut as it turns deep pink–that is, just before blossoming–and dried.

The clove has more than just culinary use and is widely used in cosmetics, especially in perfume-making and for use in room fresheners. Members of the Chinese imperial court chewed on cloves to fresh their breaths while in Greece the spice has been known at least since Hippocrates as it was a key ingredient in his elixir.

In the Greek kitchen, cloves are used in sweets, stewed fruits, beverages, but also in savoury stews. In savoury dishes, the clove is usually used whole while ground cloves are used mostly in sweets or cakes because of the more intense flavour.

Ανατολή Γαρύφαλλο Τριμμένο 15g

Το γαρύφαλλο έχει έντονη γεύση και άρωμα που συνδυάζει τις πικάντικες με τις γλυκές νότες και ταιριάζουν εξίσου με τη ζαχαροπλαστική και τη μαγειρική. Η αίσθηση ζεστασιάς που χαρίζει, το έχει ταυτίσει περισσότερο με το φθινόπωρο και το χειμώνα.

Δεν είναι τυχαίο που μοιάζει μ’ ένα τριαντάφυλλο σε μικρογραφία, καθώς προέρχεται από το μπουμπούκι της αειθαλούς γαρυφαλλιάς, ενός δέντρου που ανήκει στην ίδια οικογένεια με τον ευκάλυπτο και που συναντάται κυρίως στην Ινδονησία, τη Μαδαγασκάρη και τη Ζανζιβάρη. Το μπουμπούκι κόβεται μόλις πάρει ένα βαθύ ροζ χρώμα –δηλαδή ακριβώς πριν ανθίσει– και αποξηραίνεται.

Εκτός από την κουζίνα, το γαρύφαλλο έχει διάφορες καλλυντικές χρήσεις και χρησιμοποιείται στην παρασκευή αρωμάτων και σε αρωματικά χώρου ή ξυλάκια. Στην αρχαιότητα, οι Κινέζοι αυλικοί μασούσαν γαρύφαλλο για να φρεσκάρουν την αναπνοή τους. Στην Ελλάδα, το γαρύφαλλο είναι γνωστό τουλάχιστον από την εποχή του Ιπποκράτη, καθώς ήταν βασικό συστατικό στο ελιξίριό του.

Στην ελληνική κουζίνα, το γαρύφαλλο χρησιμοποιείται σε γλυκά, κομπόστες, ροφήματα, αλλά και στα μαγειρευτά. Στο φαγητό συνήθως χρησιμοποιείται ολόκληρο, ενώ τριμμένο προστίθεται μόνο στα γλυκά, καθώς έτσι έχει πιο έντονη γεύση.
